Traditional ginger preserving technique

We plant various kind of seasonal vegetables in Hananoie. Among them, gingers, onions and garlics are very important and indispensable in Nepal cuisine. In Nepal, people put the harvested gingers into the soil again to preserve it. This traditional method keep the gingers fresh for long time.
We cover the soil where the gingers are preserved by banana leaves or rice straws to prevent from rain water. This year we can get plenty of gingers. At present, we are using the gingers to make Roxy – the traditional Nepalese liquor. It will be ready in May.
